The honey from the best-known flavour and ancient, is the richest, due to the most variety of flowers of the mountain. Is rich in mineral salt, enzymes and pollen.
Perfume: If produced in spring, it has a slightly bitter flavour reminiscent of marasca cherry, while if later produced, of delicate hints of herbaceous legumes.
Color: Amber more or less dark
Taste: Very strong and since it is derived from the nectar of many plants it can present the typical characteristics depending on the vegetation characteristics from which is originated
Gastronomic advice:
Is perfect with cheeses such as Brie, Gorgonzola, Fontina, Taleggio, white meats, ice cream and fruit salad. A combination worthy of note is then the one with truffles
